Fermata

Bakery production software, built by a baker.

A fermata is the mark a conductor uses to hold a note past its written duration.

Plan the week. Lock the mise. Run the bake.

Plan the week

The math behind your plan.

Most bakeries don't know which products subsidize which.

Head into your week with a plan that's actually profitable. Real ingredient prices from your invoices. Real labor from your payroll, costed into every recipe. Per-product cost, down to the gram. Week-over-week sales and early-sellout signals to balance your mix. Model a price change, see the math, change your assumptions.

Fermata profitability view for the week of June 15–21: $17,319 estimated revenue, $8,788 gross profit, 50.7% blended margin, with per-product margin breakdown across Country, Baguette, Focaccia and other products colored by gross margin tier.
Per-product cost + scenarios.

Lock the mise

The mise, scaled and locked.

Recipes scale to actual orders.

Every order flows into a production week. Recipes resolve to the gram against retail forecasts, multi-channel orders, and batch planning — preferment builds, inclusions. Once mise begins, quantities lock — the bench works a snapshot, not a spreadsheet. Late orders take a separate path: committed, not absorbed.

Run the bake

Baking is ephemeral. The log isn't.

The feedback loop every head baker wants and nobody's built.

Recipes are versioned. The mix is tied to the version. The bake is tied to the mix. A photo is tied to all of it. FDT, folds, water adjustment, the baker's note — traceable back to the formula in play that week. Tap a photo, walk back to the recipe. Knowledge that used to live in someone's head now lives in the bake record.
